Horizon fine Tesco

Hello
My wife hasn't been driving long and still getting used to how things work with regards to these private parking companies. She was issued with a penalty notice from horizon for overstaying at Tesco. Since we were away at the time, she received the letter too late to get the £40 reduction, so the fee stands at £70. She had been shopping in Tesco on the day and has bank statement to prove. Tried in store but the store manager said he could not do anything. I've read on a lot of dated threads to just ignore the ticket, but on more recent legal threads, they suggest Horizon (and others) are now suing a lot more people as the process is easier for them to do online than it was previously.
My question is, are people still successfully appealing or avoiding paying these tickets?

Try Tesco CEO and email bank statement.
Never seen a Horizon case make it to a court hearing. They tend to make claims and discontinue at the eleventh hour, like most of these parasitic companies.
