I have a court letter for two parking fines can people please give me advice

I have a court letter which I have accepted and I will defend. I have read I should have got a letter before court action but I did not receive this. Can anyone explain.
Also, and this is a bit complicated. They are claiming for two parking fines at the same place. But, one of parking fine I was not even in the same county and I can prove it. I was fifty miles away. The second fine I bought a ticket.
I appealed against it and sent them the copy of the ticket. They then asked me to send the original as they could not read it. So, stupid me sent them the original. I then never heard anything about the parking fine or my appeal. That happened in 2021. Now, I have received letters this year about the fine.
I just don't know what the next steps are. They are asking for £500. Can I ask them for proof, can I ask them for copies of the pcn. I really don't know what to do as I have never been through this before.

Forget about the missing Letter of Claim, deal with the court claim
They are not fines, probably pcns from a private parking company
Which private parking company ? Which solicitors ?

The deadline for your AOS is Monday 25th August, (actually 26th because of the Bank Holiday), and for your defence it is Monday 8th September.1 -
