ParkingEye charge notice at Lidl, London

I just wanted some advice before completing the online appeal. I received a letter yesterday from ParkingEye saying i overstayed at the car park at Lidl Bermondsey (London) and shows as me having stayed for 1h 46m, this is from the time i entered the car park to the time i left.
The exact times are:
Entered: 11:23am
Exited: 13:09pm
But on my digital receipt it shows 12:58pm as the time when i finished my shopping which did mean i overstayed by only 5 minutes but they don't have those in-store clock out machines to enter your reg number at this branch as they removed them a while ago. There was also a delay at the till as the till we queued at first was closing so the cashier advised us to queue at the till behind him with no staff at it but another customer waiting. Eventually a staff member showed up. Then upon leaving i had to use the toilet then travelling to the car park, emptying everything and then returning the trolley used up further time.
When i use the template and refuse to say who was driving, I'm thinking to include the receipt screenshot as the timestamp shows i would have been only 5 minutes over and even not 5 minutes over if the till was already staffed. My question is, should i mention the parts about the receipts timestamp showing 5 minutes over and the lidl branch not having those parking clock out machines, having to wait for a staff member to come to the staff-less till and also that i had to use the toilet which only had one cubicle so have to wait for the person in there to leave, and also that it takes time to travel to the car and empty the shopping? Or should i exclude most of that and keep it simple? What would be the good parts to include if any?
