I previously ignored all their letters since I'm a resident but I suspect my parking permit wasn't visible at the time. As I understood it, private parking companies have no legitimate legal standing but now I'm been taken to court.
Given that I am indeed in possession of a permit, what would be the best way to avoid paying the £200+ fees?
I even have a letter from their law firm Moorside Legal. I checked their TrustPilot reviews and it looks more like they're running a criminal enterprise rather than a legitimate law firm.
Please advise, I don't have the money to pay this. (sad face)

Get hold of the lease. Either from your landlord or from another owner-occupier in the building.
Very likely the leaseholder has rights over the space, there is no obligation to possess or display a permit and the parking co have zero rights to be even on the development. Residents all too easily just "go along with it" because the management co (who often gets kickbacks) told everybody it was happening "to solve residents' complaints about parking".1 -
