    I think you're reading it as
    * gym = machines / weights; and
    * classes = room with instructor.

    If you're taking out a "gym membership" then I'd read it instead as 
    * gym = the whole thing, consisting of machines / weights / classes

    On that basis, the access to "gym" ie everything is only in certain hours, which they only need tom mention once. The classes portion of that is not limited eg to a certain number per month or to a lower tier of classes. Again I think that's a natural reading of the word "unlimited" but for the specifics you'd have to look at the T&Cs. Nothing in life is unlimited in every dimension, eg its limited by their availability, classes that they offer, etc.
