    You only receive replacement ink when the current cartridges are low.  It happens automatically, Epson can see ink levels through your online account.
    If you haven’t used the ink you won’t get any more yet but the monthly subscription will continue.  These schemes only really work well if you use your printer a lot.

    I am not sure which Epsom printer you have but with some models, even if you have only print a few pages, the ink cartridge will run dry = useless.

    How do they stop the inks you already have from working?  (I have an Epson eco tank printer but I haven't had to refill it yet.)

    They will run dry if they’re not used for long periods of time. How often are you printing things?

    The cartridges have a chip which is read through the user account which is how Epson gauge when to send new supplies, so theoretically they can disable the cartridge when the account is closed.
    However I had the HP version of ink supply account and they said the cartridges would no longer work when I cancelled, but they did.  I even had a spare new set they had sent previously which I gave to my son for his printer and they worked, with a different ip address.

    I've never had any bother using compatibles. The online supplier that I use guarantees the cartridges will work in my printer.
