Fridge Running Continuously

Hi
Having a problem with our fridge. It's a simple, larder type fridge with no freezer compartment. There are no fancy control boards or anything, just a simple, variable thermostat that should turn the compressor on and off to control the temperature.
The problem is that the fridge compressor is running continuously, irrespective of the dial setting. I've removed and tested the thermostat by checking that it clicks off when the probe is inside our freezer. It seemed OK but I fitted a new one to be sure. But the problem persists. I'm completely puzzled. I don't see how a properly functioning thermostat doesn't solve the problem...
Anyone have any ideas?

Is the fridge maintaining the right temperature or is it too cold or too warm? What is the temperature of the room it is in? Is it located in direct sunlight?0

It's too cold. It runs continuously regardless of the temperature of the room - behaviour preceded the current heatwave!

I think this is sorted now. In case this might be helpful for others, the problem was that the new thermostat I ordered, despite being the right part number for the fridge, was calibrated for freezer, rather than fridge use. I guess this is because the same thermostat is used for a wide variety of models and applications. Anyway, turns out there is a small temp calibration screw that can be fiddled with to get the fridge turning off and on at the correct temperature. Would be nice if the parts supplier (which in this case is obviously aimed at the DIY market) would tell you this...3
