     I do not sign in to chatgpt to use it - 

    AFAIK there's no 'guest', trial or anonymous login to ChatGPT, an account is needed.

    If the OP wants to use ChatGPT separate from Google, I suggest using a PC browser and goto https://chat.openai.com then register an account with an email/password of choice. Return to phone, delete and reinstall ChatGPT app from PlayStore then logout from Google. Open ChatGPT, look for an option to login with an existing email account and enter credentials used to register.

    NB ChatGPT supports 2FA, I would certainly enable that - I happen to use Authenticator app to generate the PIN codes, with Authenticator opening secured by a biometric challenge on the mobi (even if phone is unlocked). Defence in depth.

    I understand others saying that the phone's security is sufficient but I don't think so.  - 

    Really depends on the phone's setup, could be security disaster zone or offer very good real-world security. Unless you go hardcore with GrapheneOS!

    Chatgpt doesn't ask me to sign in to google when I use it on my laptop - so it can't be to 'keep track of interactions' or it would do it there too.  It's something to do with the fact that I installed it using play store, but I can't fathom the reason.

    Google don't create or own or run the applications on the play store  (other than the google ones, obviously), they just run the store.  Whatever the app is doing, it's the doing it because the application makers want it to, not google.

    When you access chatGPT via a browser (e.g. on your laptop) it'll use cookies to track your interactions (unless you block them).  If you're accessing it via an app, this isn't an option, so it is using a different mechanism.

    The ChatGPT app on an Android device does not require you to be signed into the app, I have tested this on three different devices.

    I thought the reason for being logged into the play store on your phone was that it could check for app updates and for security...It checks for malware and malicious apps.
    That wouldn't be the case when the app on a different device.

    If you want to use the full capabilities of ChatGPT, such as having it remember previous conversations then you need to set up an account and sign in. The web version allows you to use a limited version without being signed in. The app doesn't allow this limited use, you have to be signed in to use it. On both the web version and the app, you can sign up either by using your email address and a password to create an account or through your Google/Microsoft/Apple account.

    On the app, when you start it, the most prominent option is the "Continue with Google" option, which is the one that you appear to have selected. 

    If you ignore that option and click the sign-up button, you will have the option to create an account using your email address and password and there will be no link to your Google account.
