I voted for rosemary and tarragon - MMMMMMMMM lovely!
BUT - why not Garlic infused oil? it saves chopping up a lonely clove or if you havent any fresh garlic then the infused oil is a 'godsend'!0 -
I didn't want to use fresh ingredients to infuse because I read
"A word of warning: Oils made with fresh ingredients like garlic, fresh herbs and vegetables can support the growth of C. botulinum, a dangerous bacteria that can make you sick. To be on the safe side, always store flavored oils in the fridge and use within 10 days (so make small batches)."

I want them to last a while. Esp since I want to make them in advance.Opinion on everything, knowledge of nothing.0 -
Oh good grief - another food warning! Honestly, I wonder how I am still alive and kicking, considering I break all these 'rules' constantly!
If you follow basic hygiene steps then I cannot see how infusing oil with garlic (which is a powerful anti-bac btw) can make you 'sick'?
Now I wonder who the 'they' are who claim this?0 -
Garlic and chilli here too i'm afraid0

I am not one for the food police but these are going to be gifts. Some of which are for elderly people. If I made somebody ill I would be filled with guilt. I just want to make a nice gift that I hope people would find useful.Opinion on everything, knowledge of nothing.0 -
I'm sure all will be delicious and greatly received x I was only giving my personal preference in my cooking (we eat a lot of spicy or American foods here due to other half being American) but i would love any flavoured oil as a present xxI will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)

Would it be safer to use dried garlic, e.g. garlic powder/granules? And dried chili?
http://umaine.edu/publications/4385e/
"Using dried garlic and/or herbs is the safest way to make infused oils without acidifying the product. Fresh herbs introduce water into the oil, and dangerous bacteria need water to grow. Dried herbs and garlic add no water to the oil, so bacteria can’t grow."0 -
Good idea krlyr!
There you go, kittycat you CAN include garlic!
Thats a lovely idea for pressies btw - I assume mine will contain rosemary tarragon and garlic? just kidding!0 -
