This weekend I bought some really nice whole peeled garlic cloves in chilli oil.
There was not many cloves to a tub,but they are really nice.
For me to do my own,what do you have to do to the garlic before putting them in the oil?? :rolleyes:

Health warning about Garlic preserved in oil
I must admit there's a chap selling a selection of olives and preseved goodies on our local market and I really love his preserved garlic cloves however it doesn't look as if this is sensible if you don't know what you are doing.My weight loss following Doktor Dahlqvist' Dietary Program

I Love garlic in oil. I was at the ideal home show this year and brought a VERY large amount back on the easy jet plane to newcastle. The man infront of me was an !!!!!! and banging his seat and whinging at me and what not, got off the plane at newcastle and realised my garlics had leaked all over his armani suit jacket and louis vuitton holdall. ooooops

Hello - I would like your help please.
I have just washed out and de-labelled lots of very pretty glass bottles which previously had various things in them. Rather than recycle them, I am planning to fill them with (virgin) olive oil and flavour them by adding garlic, basil, rosemary etc.. I think they will make nice presents for the Christmas hampers I'm planning to make for friends and family (to go along with the home-made jam and sweets!)...as I'm a penniless student and thinking of cheap, but thoughtful, present ideas!
Problem is - I don't know whether I can just add the herbs and garlic or whether I have to treat them (i.e. dry them or something) first? Anyone have any idea? Thanks very much in advance for your help.
P.S. Any other ideas for home-made hamper ideas also gratefully received!0 -

Simply put, you cant do this unless you want to poison them, I'm sure somebody will be along with the science behind it. The shop bought stuff goes through special process.0 -
Garlic, vegetable or herb in oil mixtures may support the growth of C. botulinum bacteria. For safety reasons, they should be made fresh. Leftovers should be frozen, refrigerated for use within 10 days, or discarded.

Wierd though, because in searching I have now found a few websites with recipes for infused oils. Some say they keep for 6 months! Here's just 2 of them :
