    Use the rolls to make bread stuffing.  My mom always made bread stuffing for the Christmas and Thanksgiving turkeys.  She used stale white bread but any thing could be used.  

    Cut the rolls into large cubes (1 - 2 inches across)
    Fry up chopped onion in vegetable oil - maybe an inch deep depending on how big your pan is and how much stuffing you need to stuff the bird.
    Add some herbs - thyme, parsley, oregano and salt and pepper.
    Add the roll cubes to the mix and ensure they are well coated in oil - to the point of being almost "damp".
    Prepare your bird (chicken, turkey, quail, whatever, maybe not duck or goose as too greasy already)
    Stuff the mix of cubes and onion and oil into the bird cavity and close the cavity with skewers or by sewing it shut.
    Roast bird pretty much as usual but may need a bit extra time due to being a solid mass.  When done scoop out the stuffing and serve along with the sliced meat as well as your other veg.  

    Much nicer than any sausage stuffing I've ever tried.  Because it's what I grew up with.  The sausage stuff just seems to be some sort of nasty meatloaf.  

    edited to add - of course if you did make breadcrumbs with the rolls they'd be great in a meatloaf.
