easyJet flights are non-refundable.  They will offer at their discretion a goodwill gesture of a voucher in serious illness cases.

When you book via an OTA they (or their software) generally mimics booking on the airline website in the same way you'd book direct, but they give their own contact and payment details.  When you contacted easyJet directly this may have muddied the waters somewhat as their process would always be to issue any contact/vouchers/refunds to the details given at booking.

As you booked a package with LM.com it would have been better to cancel the package with them and seek a cancellation invoice from them.  Likely they'd have refunded the accommodation as they've been able to recover the money, and then given a cancellation invoice for the flight costs which could have then gone to the insurer.

That's not a criticism of your actions btw, it was clearly a difficult and stressful time .  Unfortunately I'm not sure what best to suggest going forward other than some of the suggestions above, but with the flight booking cancelled and a voucher issued I'm not sure that can be reversed.
