Adhesive and holes in wall after removing tiles

I'm having a go at refurbishing my utility room, which involves removing the twenty year old tiles and either fitting new tiles or using an Ikea splashback panel.
However tasks are never as simple as I imagine. The old tiles have come off with some of the plasterboard and there is lots of adhesive left on the walls.
I'm not sure whether to cut out all of the remaining plasterboard (that had tiles fitted) and replace with new, or to fill the holes with cement and try to wash/dampen/wipe off the adhesive?

The simplest way would be to replace the plasterboard in the tiled area, much quicker than spending hours / days trying to remove the adhesive and patching the holes.3

I had exactly the same - grid cardboard inside one of the walls, dot and dab on the others. Was tricky but I managed to get it all off and then fitted new board, using some wood behind. Skimmed with tape and easifill 60 today. Then will skim again tonight, sand and then paint tomorrow.
Then next stage - tile the floor and splashback - Youtube, here I come!0
