Bought a couple of MSS305 plugs to monitor my energy use.
On the home screen can see both added and when I go into each of them can see the energy use of each plug. Is there a way to see the total all both (all) plugs rather than just individually?

You can certainly do that with Home Assistant but there's a lot to do to get to that point. If you're a techy computer fan might be worth a look but you will need reasonably solid IT skills if you go down that route so not an option for everyone.2
