Given they've rebooked twice, should you wish for a refund, I would advise them you are treating the contract at an end under Section 28 of the Consumer Rights Act
https://www.legislation.gov.uk/ukpga/2015/15/section/28
The store and customer services are unlikely to deal with such stances, you should complain higher up, they will either agree to cancel, pull their finger out or bung you a few quid to wait (or ignore you but hopefully not!).In the game of chess you can never let your adversary see your pieces1 -

hi yes it was 3k it was a tempur mattress they are expensive but you get what you pay for i have one that I ordered from another store not bensons about two years previously and was looking for another one so ordered it in store with pillows and mattress cover0

That's a fair price for a Tempur mattress.
Purchased in store so you don't have an automatic right to cancel.
Given the repeated delays, you are able to require "specific performance" where you set (agree) a date and if that is not met can then cancel.
Before taking that path, it is worth finding out what the lead time is with other retailers for the Tempur mattress. Look online to see if there are other people also experiencing delays via other channels. If Tempur has a supply challenge, switching retailer will only put you to the back of the queue again.
In terms of overall costs for mattresses, when we purchased our replacement mattress a couple of years back, we saw some at regular high street stores priced up at £15k. No idea what that does that is better than a more regular priced mattress.0
