Builder added extra cost without disclosure

Hi all,
Recently I've had my bathroom redone. The builder quoted that it would take roughly 7 to 10 days. It took 9. Originally he asked if I could help with parts of the job - removing tiles etc and prepping parts that you could do as normal DIY. I then couldn't due to injury, so asked if there was someone who could help that would be beneficial.
The original quote (not that we ever got one in writing) was £180 per day. He then charged for additional supplies needed (completely get this). What I don't understand is that when the building work was done and final invoice sent; the rate was now £185 per day and the handyman who worked 6 out of the 9 days was also the same rate. Which puts on another £1100 to our bill.
We also are awaiting him to finish snagging jobs 7 weeks after (he said he'd come after 2). I have used contacts to finish some of these. So far I have held back £1000 of the final invoice but I really feel loathe to pay the remaining balance due to the lack of clarity on the bill. Especially when he knew our budget and this was never discussed how much additional it would cost. Where do I stand on not paying the remaining?
