I found an address via a Google search (info@eurocarparks.com) but an email into which that address was copied has 'bounced back' as undeliverable. Any assistance would be much appreciated.

Nobody emails Euro Car Parks except if you want to make a complaint. Or to contact their DPO. Both emails are easy to find for complaints and data privacy matters.
There's no reason to contact them otherwise.
Obviously, if you are dealing with a court claim you're dealing with their solicitors, not ECP.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
