I bought an item from an independent trader within a craft centre. It is full paid for but I have not collected it yet. They have a sign saying all paid for items must be collected/ delivered within 7 days unless otherwise agreed. If not I will be refunded and the item put back up for sale. Can they do this?

If you can't collect or take delivery within the timeframe, simply contact them and agree a different date.
If you don't collect or contact them to reach agreement they will refund you.
Do you think the trader should just hold the item indefinitely?

Yes. Auction houses, antique centres, art exhibitions etc often have similar terms.
Such outlets typically have very limited space. If an item is on the shop floor but sold it is either taking up space for unsold items, or has to be stored taking up space for storage of other items which haven't been sold.1 -

It also seems like an entirely reasonable condition - it's a small trader at a craft centre, not a huge retail outlet, keeping hold of sold stock indefinitely is clearly going to cause them issues. Also, given it says "unless otherwise agreed", I don't see why this would be a problem anyway - just agree a date with them.1 -

If you know you can't collect within the 7 days then it would be polite to let them know and come to another arrangement with them, or get someone else to collect for you.
