... how do I know these are legit?
Meter readings are meter readings. The meter is right there on the wall.
If the meter readings match the ones on the meter, and the meter serial number on the bill matches the one on the meter, the bills are likely to be correct.
You can share the meter readings and bill details here and we can help you check them. Or not.

... just random high amount numbers with no explanation and certainly not tallying up with the figures on my  mothers meter

    Ok, let's approach this logically.
What is the period (the dates) where the bills are in dispute?
Immediately before that period, what were the meter readings and date?
What do the same meters read today?
    What tariff(s) and which supplier(s)?
If the meters have been replaced, what were the closing readings on the old meters? Were the new meters brand-new and did they begin at zero?
Op, if you answer these questions from QrizB, people might be able to help you.

Just saying it's confusing, and that your household is bigger and that your usage is only £30 more, is not going to get you any answers I'm afraid.

These are not charges related to meter readings like i have explained already, this is why they seem like numbers just pulled from the sky to compensate for this "mistake" that credited my account with over £3,000.

But OK I have a very busy day so will try uploading some statements later tonight so some of you might be able to help me understand it, I do appreciate the help.

That.commonly happens when there's been a period of estimated billing. When an actual meter reading was submitted, the supplier un-bills all the estimates (resulting in a large credit) then re-bills using the actual figure (resulting in a large debit).
It should all become clearer when you can share the bills and readings.

£30 equates to (very roughly) 120kWh if on SVR, or about 4kWh per day - A reasonable difference in usage between a 2 person household and a 7 person one.
Any language construct that forces such insanity in this case should be abandoned without regrets. –

Also she lives in a 4 bed house with 2 people and very little electrics where as myself live in a 4 bed house with 7 occupants many devices much technology and yet our bills are about £30 a month different, I find it difficult to see how this is the case.
Modern devices use very little power and £30 a month can equate to 120 kWh which is a hell of a lot of devices and TV's.

It may also be the case your technology is newer than parents technology and therefore more energy efficient.

They could as well be paying more per kWh than you do.

Lots of variations and possibilities but is does not mean your mother's bills are wrong just because yours is only £30 a month more.

You have to sit down with your mother's bills and find the last actual meter reading and amount owed at that point and work forward to the latest meter readings then find out what tariffs they have been on since then and get calculating.
