Really confused atm with all the rises. Have currently Intelligent Octopus Go for the car , and Octopus 12M Fixed for the gas . With the rises on the electric side would it be any better for me to go to a fixed and get rid of the bespoke car tariff ?

Your Octopus electricity bills calculate what your average unit price is. Take a look at that, I expect you'll find it to be less than 20p. Mines around 15p.
I doubt that you will find a fixed rate that's anything like as cheap.

What percentage of your electricity use is at the 7p rate?

The cheapest tariff will likely be tomato lifestyle if that is the only requirement (with a little risk) that is fixed for a year as well.

As mentioned above you won't get a fix that is likely to be at your average on intelligent go.

The answer will always depend on the split between your use at the low rate and at the high rate.
Due to the large difference between those rates it is unlikely you will be better off on a different tariff unless you are only charging your EV a very small number of times a month...
For me the average cost per kWh each month is 7.16p, that is an extreme example as I use batteries to cover peak use.

15.03p per Kw according to latest bill . So it's a case of stay put then?

    6.67p/kWh 394.4 kWh £26.291

    25.97p/kWh 301.4 kWh £78.251

    That's percentage this month

That suggests to me that you're using about 55% of your electricity at the 7p EV rate, and 45% at the 25p daytime rate. You're not going to beat that with either a single-rate fix or a current E7 tariff.
You might save a little by switching to Tomato, but they're a bit quirky. There's a thread about them that you should read before making a decision.

How much daytime charging do you do on IO to get the most out of the reduced to 7p costs? My EV charging is all daytime.

If your average cost is 15p, then the odds of a fixed tariff that low are slim to zero...

    Mine was down to 532.6kWh @ 13.51p/kWh
    Split over
    6.67p/kWh 320.6 kWh
    23.85p/kWh 212.0 kWh

I plug in anytime of the day ,due to the inconsistency with my car(Audi Etron) and the Ohme interface and IO  it seems to charge at the 7p rate most of the time (or there is always capacity in the network to allow this).Always shows the car at 0% when plugging in so I just do the maths and add whatever % I need via the Ohme app to reach the 80% target. This has been consistent for months now as due to recent updates the handshake between the 3 Apps  has broken down.

Just remove car API (app) & do it manually. Saves a lot of problems, as you have found.
