Just use the usual recommended credit and debit cards people talk about using overseas. So Barclaycard Rewards, Halifax Clarity, Chase, Starling, First Direct. From memory, the HSBC ATMs in Mexico didn't charge any fees for withdrawals, so just look out for them if you need cash.

No need to take any pesos or US dollars with you.

Mexican currency is free and no limits on them changing money. They'll except dollars but you'll get a worse FX rate than if you paid in pesos as you're adding time and cost for them to convert it into pesos. Obv tips are different.

Card machines are wide spread in towns and cities even away from the main tourist haunts but not in taxis or buses or street food carts. We only went to one restaurant that didnt accept cards and they had a big sign outside to the fact (and were in the process of getting a card machine).

Normal rules apply on overseas card use. One thing we learnt after spending 6 months there was how much the ATM fees vary by state. A bank thats really cheap in Oaxaca may be fairly expensive in Quintana Roo but if you arent moving around much it's not an issue.
