Hi,
I am experiencing occasional signal breakup and freezing on my Samsung TV.
I have 100% signal strength and quality & Full Fibre 500+ Mbps broadband.
Any suggestions?

Have you run the latest TV update? Could be a software issue, but check the TV settings, as it may be signal interference outside your setup. See if it does the same with other TV's in the house.1

I had a similar problem with a TV showing 100% signal strength. Cured it by buying a (cheap) signal attenuator to go on the aerial plug.

Could be any one of any number of things.
Thermostat switch interference (Central heating / fridges / electric fires / immersion heaters)... all should have suppression filters inside but they can fail...
Mobile 5G mast interference --- Restore TV | TV Signal Interference | TV Filters can help if it's a recent change.
Signal overload is a possible.
Weather related interference is another possible and is current High pressure currently affecting TV & Radio services across parts of the UK - 6th February | Help receiving TV and radio
Reception Location and transmitter would help. Plus Freeview has interference predictions are available here: Detailed transmitter information for industry professionals | Freeview
If it is weather related then much nothing can be done to help, typically. Thank goodness for Catchup TV (iPlayer)!1 -
