How to convert conservatory in to useable space?

We have a conservatory at the back of the house which is brick built (see attached photos).

Wondering what’s the best way to convert this in to a useable space and room that’s not boiling in the summer and freezing in the winter.

We were thinking getting a lightweight tiled roof put on, but would this be worthwhile if the walls and floor arent insulated?

The floor has electric underfloor heating under the floor tiles which at the moment is very expensive to run

We have a conservatory of similar design although it only has windows on the front elevation.  We have had a lightweight roof fitted and it makes a massive difference to the stability of the temperature.  We do have underfloor heating but it is set at about 10 degrees C. We have thermometers in the main house and the conservatory and there is rarely more than a few degrees difference even after the coldest nights.  Similarly the difference in the summer is much less than when it was fully glazed roof.  Ours is certainly usable all year round now.  We don't turn the heating up in the conservatory in winter, simply open the door from the house and the conservatory picks up to house temperature quite quickly.

Last 2 houses we’ve had had conservatories on them. They last 6 months before I knocked them down and put down decking instead.

Rigid insulation and a lightweight roof.
Line the inside walls with insulated plasterboard.

If the floor has UFH, then surely it is insulated to a reasonable degree too? Do you have any info on the build spec? In any event, floors draw the least amount of heat away, so adding anything like a thin layer of fibre insulation and decent timber or laminate will add significant insulation.
Stop using leccy UFH - that will be costly.

Tiled Conservatory Roof Cost A tiled roof with 100mm kingspan or similar will make all the difference. Costs about 5-6k for a good job though.

Get plenty of quotes.  We were quoted £15k for a similar roof by the company which provided the original conservatory.  We actually paid a different company £8k for exactly the same roof.

Have you considered how much darker the adjoining room will be?

That's a good point.  We had 2 glazed panels included in ours to avoid that.  The adjoining room is still pretty bright.
