How to setup an esim on an Android phone

I hope you can help. I didn't know whether to post this question on this board, the mobiles board or the travel board. But here goes.
I am tech support for my extended family but have never used an esim. I am trying to get my head around setting one up for a family member.
I have read the instructions on this site:
I think I understand the installation part.
I am not clear about turning off roaming on your physical SIM.
Can that be done in settings?
Once roaming is turned off does that mean the phone cannot receive calls and texts on that number?
Do you have any advice to give?
Or are there other websites that explain more clearly the exact steps involved?

You go to the settings of the SIM in question (eSIM or physical SIM) and there you can turn roaming on/off and set data limits.If roaming is off and you are in a location where the SIM would require roaming then yes you will not receive and calls or texts on the number associated with that SIM. You can just turn data roaming off and keep voice/text roaming on.On my Pixel phone, Settings->Network and Internet->SIMs->Here you see a list of installed SIMs and you can turn them on/off. Tap on a particular SIM to get to the settings of that particular SIM. Other Android phones will be similar.1

I've got an ESIM for travel with Roamless and found their website help very good and a lot of what it says might be applicable to ESIMs in general but if you've not bought the ESIM yet then I have found Roamless to be very good but there are lots of others.
You can read a lot about different ESIMs on the Sim Sherpa website1 -
Not all phones work with eSIM and not all eSIM are compatible with all services.
So be careful before switching over from a "plastic SIM" to an eSIM.1
