Universal parking fine - 2 months later ??

I’ve just received a parking fine for something that happened in November. Unsure why it’s took 2 months to come through but here we are.
i parked up here whilst waiting for someone, i didn’t leave the car at all and i was only here for around 5 or 10 minuites max.

I have attached photos that they have used as evidence against me. Firstly, they have used a photo of the no parking sign at 8.30pm, when it was still light and the sky is blue. You can see my car wasnt there until almost 11pm, when the sky is pitch black and lighting was reduced. The premises was clearly closed at that time of night and I did not see any signage saying you could not park there, in fact a few others cars were also “waiting” here as you can see in the reflection of my car another cars break lights.
I also wasn’t blocking or obstructing the premises at all and left plenty of room if a vehicle needed to drive in or out of the premises (however i should mention it was clearly closed)
I have checked out the location on Google maps and I think the “ no parking sign” is what I’ve circled in orange.
it is absolutely tiny and considering it was pitch black and I was at the other side it’s understandable I did not see this sign, nor the other cars that was there too.
what should I do? Should I appeal with the above comments ?

How can one sign forbid parking but at the same time 'say you can park here and it will cost you £100'?...
