Travel visas to/from EU

My wife has dual nationality/passports Polish/ British.With the new travel visas starting soon can she
1. Travel UK -EU using her Polish passport
2. Return EU to UK using her British passport
If the answer is yes can she insist the airline accepts the 2 passports as above. I am thinking of budget airlines in particular Wizzair and Ryanair. Also Easyjet at times.
if they will not on a return ticket I assume singles bought each way would be acceptable
