As per the title, I've just got a new Windows 11 laptop for my daughter.  During the setup it made me log into microsoft account and I'd like it to run on a local account.

Can this be done, I can't seem to get it to....?

Yes, Google how to switch Windows 11 to a local account.

How do I delete the administrator account I had to use to set up the laptop?

Sign into the account you created.  Go to the accounts area in the settings.  There you can create a new account and you can make it a local account during the account setup.

Log into the hidden administrator account that give full access.  A quick internet search will tell you how.  Delete the account.

You must have at least one normal Administrator user account, it can be a local account.
If you do turn on the special hidden administrator then always turn it off again after use, it has special elevated permissions and it's a big security risk to leave it enabled.

If you've already set up the MS account as administrator, you'll need to create a second local administrator account, and then remove the original one.

If you're setting up the PC from scratch, then you can force a local account during Windows setup as linked below. When prompted for your MS account details instead open the command prompt (shift + F10) then type "oobe\bypassnro" (without the quotation marks). The PC will reboot and when you get back to that screen you will have the option to proceed without connecting to the internet, and set up a local account instead.

As an aside, I'd also look into changing your region during setup to somewhere in the EU rather than the UK, to take advantage of the privacy options that are only offered to EU users.
