So both OH and I will need to get new sims in Canada so we can contact each other or anyone else while there.  And we're still left with the issue of not being able to do any online banking as we won't be able to get OTPs or whatever from banks.  It's a real nuisance as we plan on being there for quite some time and will definitely need to do some banking at some point.  

One way around this is to use an eSIM (assuming your phone supports them). You use the eSIM for local calls and data but the regular SIM is still active to allow receiving of SMSs which on most networks is free when roaming.

There are still services like Rebtel which offer discounted international calls to landlines/mobiles by routing your voice over the internet and then 'breaking out' in the destination country to ring the phone. The person being called doesn't need any app installed on a mobi. These services generally use an app for the caller, but you can still go 'old skool' to dial a service number in the UK, then dial the international number. These services used to be popular pre-WhatApp etc. and roaming plans.

When in Canada, you could just buy a basic mobi for CAD 35 from Walmart and a low-cost pre-paid SIM from Lucky Mobile

Another option is that if you have a Microsoft 365 subscription it comes with 60 minutes of Skype credits per month which can be used to call phones anywhere
