    Personally I'd make use of the unusually high parapet wall to hide plastic coated steel sheeting when viewed from ground level.  So long as the detail between the wall and sheets is done correctly steel would give a leak-free roof for much longer than I'd be likely to worry about it.

    I did my own shed roof with EPDM in 2021. I think it was a 4m x 6m sheet and yes, it was a pain in the bottom. But hopefully I won't have to do it again!
    (Unlike shed felt, which seemed to need replacing every 5-7 years.)

    OP -I would guess that the people you invite around to quote will all have their own favourite roofing sheet material, so be prepared for different opinions !

    • Remove old boards 
    • Install new 18mm ply boards 
    • Instalpvc facia at back of building
    • Sort drainage at back of building
    • Install two layer felt system
    • Remove all rubbish from site

    For 25% extra I'd go for the fibreglass from the two options, if I could afford it. Did you ask about the possibility of increasing the slope a bit to avoid water pooling? It might add a few quid more, but could be worth considering to avoid issues later.
