Self-employed - Nationwide banking app confirm your details questions

How are self employed (sole traders) answering the what's your employment status and income questions when asked to confirm your details.
The person I'm asking for is self employed so income isn't static. It's up and down and income isnt assured. Their customers pay them for treatment into their account but no one can guarantee what their income will be when self employed, it's often feast or famine!
They're a holistic therapist but what questions do they ask for self employed. As they need to keep using the app but they have learning difficulties and this is causing them huge anxiety and they don't know what to do.
If worst comes to worst and they don't do it by the deadline what happens, can they still access their accounts in branch?
I'm thinking of suggesting they make an appointment in branch so someone can support them through the process but whether they'll get an appointment before the deadline I doubt.
Advice and experiences are appreciated to stop this lovely person imploding with anxiety. Thanks

Just give a best guess figure that's all that's needed

It's little more than something they can use to work out what other products they might want to market at her.
Determine a best guess / average / reasonable figure and use it. It's not like they write to HMRC to check!0 -
It's a question about her profits.
(If she were employed they wouldn't want to know what she claims in expenses.)

If this isn't answered in time, it's likely the account may be frozen.
So just make a best guess.
