Well, that seems conclusive. Good fault finding procedure in my opinion. Not sure where you go from here. I've had a search and can't find a power supply like the one you pictured. Good luck finding an alternative, otherwise its a new cabinet.
My cabinet (daftly expensive but that's another story) has just a 'proximity sensor' on/off control for the LED lights. My only problem is that, when switching it on occasionally, it triggers the bathroom ventilators fan. No big deal really.0 -
You refer to a 'transformer, but most of that board in the box is a switched mode power supply
Something like this could be used to replace it
https://www.amazon.co.uk/Transformer-30W-Supply-Driver-Adapter/dp/B0DFGTH6Y7
If your not sure then of course don't fiddle with with it
But if you took that mirror and that bit from Amazon to a Repair Cafe, if you have one locally, I'm sure they could wire it in for you

Re the two mains connections, one appears to be the main input coming into that box, with the blue terminal block on the right taking the mains into the PSU module, the other mains connection seems to be coming out of the box to go to the Shaver transformer
I would disconnect the existing PSU module from that blue terminal block and use that connection as the mains input to the new psu module
Not exactly clear why 2 low voltage outputs have been used, a better picture of the label and the output connectors on the PSU board would help, but its labelled as a 30 watt unit and no mention of anything other than 12volt output
Given the price of the module on amazon, you could always use two
