From research, it seems Sainsbury's do not own the car park, and after contacting them they will not be able to assist. The car park is owned by Greenwich Car Parking Services Ltd / Greenwich Enterprise Board who can be emailed at parking@geb.co.uk. Plan A - I have emailed GCPS directly asking if they can cancel the ticket. Waiting for a response.

The driver paid, but is alleged to have overstayed parking. Additionally, they paid parking late - on return to the vehicle instead of at the start (something to do with many screaming kids and distractions, which I do not believe carry weight in a court of law
).

The sign, though ridiculously wordy, does seem to be clear and not at 15ft height. I was not the driver, so I will head to the car park to check this properly when I can. This sign pic was taken from another MSE Parking Fines thread.
Am I correct in my thinking that because this is ParkingEye I should be more cautious about appealing? £70 is a gut punch for buying some bloody vegetables! Perhaps appeal with standard blue-text and give landowner more time to respond?

It's not £70. It's £60.
Not seeing an appeal point so either pay it (ouch) or escalate the landowner complaint.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).

Thanks @Coupon-mad. I need to put an appeal in to PE in order to extend this £60 payment window to give the landowner time to respond.Do you have any advice on what can go in that appeal? Realistically, from what I'm reading, PE rarely accept appeals for any reason, so I don't really know what to write considering this won't be taken any further.0

Use the blue text template in the newbies sticky thread in announcements by coupon mad, for your keeper appeal to Parking Eye, seeing as you want to extend the timescales2
