Received NTK as vehicle was quite obviously over two bays.

It's a free car park, the passenger had to open the door fully as their leg was in a cast and had crutches. I can only assume the driver didn't think this was an issue, as there appeared to be plenty of free spaces around, and parked the vehicle well away from the hustle and bustle of other users.

I've appealed as the Keeper online, purely with:

"
I dispute your 'parking charge', as the keeper of the vehicle. I deny any liability or contractual agreement and I will be making a complaint about your predatory conduct to your client landowner.

There will be no admissions as to who was driving and no assumptions can be drawn. Since your PCN is a vague template, I require an explanation of the allegation and your evidence. You must include a close up actual photograph of the sign you contend was at the location on the material date as well as your images of the vehicle.
"

The images of the vehicle are crystal clear, but the sign image is not clear in the slightest, can only really make out the phone number, and Headings that are in Bold and Capitalised.

Any more advice before further correspondence arrives?

UKPC signs are nearly always inadequate and incapable of forming a contract. Try reading the charge amount for breaching the parking terms from a car length away.
Get your own photos of the site and signage, then use the worst ones (the ones that support your case) at PoPLA, especially if they are UKPC's own images.

Whilst the passenger may have needed more room to get out of the vehicle, the driver should have moved it after unloading. This is one of the reasons why the unregulated private parking industry exists.
