What can I do with 2 coconuts?!

My boys won 2 coconuts at the school fair last weekend. Looking for inspiration of what to do with them.

I can remember having a dessert on holiday in Barbados years ago. That was a sweet pastry case, then a coconut flavour sort of solid creamy mousse, then meringue on top and baked. If anyone knows what that is and has a recipe, I'd appreciate it.

becles, having made it for fathers day, i cant recommend delia's FRESH COCONUT LAYER CAKE enough, it went down an absolute storm

i added a drop...ok, a a BIG drop :d :rotfl: of malibu to the frosting, and it was gorgeous! and aside from getting into the coconuts, it really was a walk in the park

You could make a great old style bikini top from one of them You only need to add a bit of string. Better still add some scoubidou straps!
