Please can someone confirm my belief that if you pay just the deposit (over £100) on a holiday costing £1500 & you pay the balance by other means, then you are still covered by the normal consumer protection rules, covering the total amount of the holiday.

If you mean you are covered by paying part of the sum owed with a credit card then the answer is yes your total bill is covered under the CCA.0
