Depends on if it's single trip or annual. Single trip starts from the date of purchase, annual starts on the requested start date, which normally would be the day of purchase, the day the current policy lapses or, if someone has missunderstood, the date they are due to travel.
TheOP ‘s package holiday started from Gatwick but they had to get flights to Gatwick to start it.
Is the insurance cover for the holiday including the these flights or only for the package holiday. The OP wants it to be only from the start of the package holiday as including the extra flights means the holiday cost exceeds the policy cover.

Which is fine... cover £5,000, holiday price £5,200, Claim £4,800. There are no averaging terms in the insurers current wording just they won't payout over the policy limit but the claim is below the policy limit so non-issue
