Painting walls for new kitchen

I'm getting a new kitchen installed with new cabinets, worktops & floor tiling.
I know what colour schemes I'm doing, so sage green cabinets with silver grey walls.
Do I need to paint all the walls even behind the cabinets or just walls that are visible?
And can a kitchen fitter do painting or do I need a specific painter/decorator. And do I need to find them myself or can the fitter recommend?
Last time I refreshed the kitchen was just painting the doors myself.

We painted our kitchen after the previous kitchen was ripped out and before the new one went in. We had to do a couple of touch ups afterwards, but that was no problem.
We painted all of the walls, focusing slightly more on the areas that would remain visible - I didn't for example obsess about the area that would be behind cupboards1 -
It's much easier to paint the walls before the new cabinets go on. But you can of course paint around things afterwards. I would just do it yourself, it's quite easy if you are able bodied. Yes a kitchen fitter will probably do painting if you ask them, but probably not if they are atatched to where you bought the kitchen i.e. if you've paid for fitting, they are not going to do painting as part of that price.Cupboards are quite easy as you can mask the edges without tearing paint of anything. It's usually a pain doing some of the top bits that are visible but hard to get to. But you can get around that with some long handled angled brushes1

Absolutely no point in doing the bits behind the cupboards.If you are paying someone to install, and another to do the painting, there needs to be some coordination between the two trades. Painting walls before units are installed saves on a lot of masking, but enforces a delay on the fitters between removal of the old and installing the new. But the installer may have a decorator that they can call on and handle the coordination "in house".
