According to this webpage, the transitional protection would not be lost when your son leaves education regardless of the reason that you qualified for transitional protection: When Will My Universal Credit Transitional Protection End? | Turn2us

Also, because your transitional protection is a set amount that is allowed because you were receiving the Severe Disability Premium, it would be perverse to remove it because of a change of circumstance that was unrelated to your disability.
The comments I post are my personal opinion. While I try to check everything is correct before posting, I can and do make mistakes, so always try to check official information sources before relying on my posts.

Once awarded, the transitional element is part of your award. It can only be lost in two ways, your UC claim closes or through erosion due to benefit increases. A change of circumstance that reduces other elements will not affect the transitional element.

You will of course lose the child element when your son finishes his course.
