Stumped for a quick Pud??

I wanted a quick pudding, cold for a warm day, suddenly remembered a recipe I used to use years ago when the kids were small.

Take half a tin of evaporated milk and put it in the fridge to cool....... empty it into a large bowl and whisk with a hand held mixer or in a kenwood chef until it has fluffed up to twice the volume.

Melt a jelly, strawberry, rasp or blackcurrant work well, in a tiny bit of water in the microwave on high for 1 minute then with the whisk going at full speed whisk the melted jelly into the evaporated milk, it will bulk up quite a bit more so make sure you have a BIG bowl....... when all the jelly has been mixed in pour into small dishes or a large dish and chill in the fridge. serve with a blob of icecream or if you feel really sinful pour double cream over the top, or whip some cream and pipe rosettes around the edge. I have done it with orange jelly in a big bowl and decorated the top with mandarin oranges and whipped cream, you can do the same with fresh strawberries if you have just a few left..... I am sure the creative amoung you can come up with some other idea's

I have also used this method for a change on trifle instead if using just jelly.... it is very rich, so a little goes a long way, I usually call it whatever jelly you use... fluff

    This is ideal for our puds collection in the recipe thread... just give a name erm... something like Fruit Jelly Fluff and add it in. I'd be glad to index it :)

    Boil a bit of pudding rice in water. Drain excess water and add to a fruit yogurt. Nice and light and spreads a yoghurt out between 2 or 3 of you.

  • I use the evap milk and a lime jelly - put digestives/butter in a flan tin and pour the mix over the top - hey presto - cheap as chips cheesecake!!!

    I do the same pud with jelly but use natural yoghurt instead of evaporated milk...much kinder on the waist:rolleyes: (says she about to scoff a Galaxy ice cream bar:o)

    My version of the same dessert uses 1/2 tin of whipped evap & a jelly made up to 1/2 a pint instead of a whole pint. This is more like mousse, so it is just called "(whatever flavour of jelly was used) mousse."
    Very original...

    ps. Just looked at the original recipe posted again. For this version you fold the jelly into the evap, don't whisk it.

    Not had that pud in years. Yummy.

    And we use to called it mousse as well. LOL!!!!!!!!!!!!!

    Not very original but very nice. Can't you get half fat evporated milk or is that just condensed milk.

    Yes you can get half fat evaporated milk, condensed milk is something quite different, delicious eaten from a spoon ............. oh dear sort of gives my age away we used to have to use it during the war when getting fresh milk could be difficult......

    Age has nothing to do with it!!!! My parents were toddlers in the war, but I still love condensed milk by the spoonful. My grandma, who is nearly 97 & lived through both world wars, also has fond memories of spooning out the stuff as a small child.

    Rereading this post, I'm sure my mum used to make it for us when we were little - as I remember it was gorgeous - a revival is in order methinks! :)

    My mum taught me this one its fab, lemon and lime jelly (with extra lime juice)definately makes the best mousse.
