Thank you. I looked on-line for a shed the same size as garage but 18' X 10' was the biggest I could find. Had another look just now and found one 20' X 10' so that would be good.

If I demolish my detached garage but replace it with a wooden shed/garage almost the same size do I need planning permission?

I'd look into 'summerhouses' rather than sheds at that size. Some place does a terminator summerhouse that comes up on hot uk deals from time to time. Could be worth a look.
Even just for storage it might be better - you're limited a bit with shed storage due to damp and temperature changes in my view. Some of these summerhouse can be insulated to a degree, and can be a really nice space0 -

When I accept a builders quote for demolition of the old garage, putting up a piece of fencing and a new wooden garage or shed, should I expect to pay a deposit?

All the summerhouses I've ever bought, the price includes delivery and installation. So, perhaps you might not need a builders quote for that part of your project.0

Also probably quite expensive to employ an experienced builder to put a fence/shed up.1
