Sorry to offer just glum ideas rather than something more positive but without a decent bank account behind you it may be very difficult indeed.
I am wondering if you could find a room rather than a flat. You may find it easier and once you have a job you will be able to save more money to put aside for a deposit in the future. Another idea. I see you have some experience in working in pubs. It may be worth looking round to see if you can find a pub that has a room available.I wish you luck2 -

I'm a bit confused about one aspect?
You say that you want to leave Greece and move back to the UK because your current employer is treating you badly.But then say that it's an American employer and you want to stay with that employer after moving back to the UK?PS. Murphybear had a good idea above.
When I had to move pretty quickly for work I took a room above a pub at first while I looked for a flat.
I ended up living there for 10 years, and ended up working there too as well as my main job.
You have no tenancy rights of course in a room above a pub, you are just a paying guest.
(You can still claim UC Housing Element towards the rent, if you qualify for UC).Another possibility - You may be able to find a hotel, holiday site, or other job with accommodation included,
