i currently use an app on iOS for one of the big banks
The thing is, my Apple device is now getting old and out of date and its iOS version no longer receives any updates

The banking app in question needs to be run on iOS 15 to get updates- which is fine at the moment because I have iOS 15 on my device
the question is this - What if the bank announces in the next few months etc that to receive updates you need to be running iOS 16
obviously I won’t be able to get anymore updates to the app - but will the app still carry on working without them?
or will it then be utterly defunct?

It's an ongoing problem with all the banks and has been since they started making apps available. Certain features will not update on older models but they may not fail completely. As a rule, app will not work. As O/S is deemed either insecure or that features required in their app are not supported by older versions.
Time to upgrade I'm afraid or swap banks to one who does still support o/s
Given IOS 15 only came out in 2021, I think it will be a while before banks feel it is a risk.Life in the slow lane3 -
The thing is, I’ve not been getting updates for my Amazon app for over a year now (due to my old iOS version) - but it still works fine!0

It may well still function fine, but there could well be known exploits which are now not going to get patched meaning that anything could happen.
Just because it functions doesn't mean it should still be used.
If an exploit was used to empty your bank account through an app which is a non supported version (that still works) whose fault would you take it to be?0 -

They will probably allow you to continue to use the iOS 15 app for a short while though it won't be updated.
However, if/when they have a major update or introduce new features (or fix major bugs) then they will probably stop supporting old iOS versions1 -

Not sure if applicable but even when the app gets deprecated the web version usually keeps working - assuming they have one2

It will depend om the bank, but at some point you'll need to update your phone if you wsnt to keep using the aop.1
