Just wanted to follow up - thank you all for your help and advice!
Replacing the mixer shower was a doodle! The hardest part was locating the stopcock, found it was stuck, so went to the water meter outside where there's a long handle turnkey to shut down the water supply.
Silicone grease was a great shout too (had to purchase from a local plumber as the ebay one is while a lot cheaper is coming from China and not due to arrive until October!).1 -

It was really easy to shut off the water supply outside so we will leave the internal stopcock as it is - it seems more trouble and expense than worth.
But photos:
Oh, another lesson to learn: Check and check again the contents of the shower kit box! The soap tray bracket and hose retainer were missing so have contacted Triton - hopefully they will send out the missing parts.
Also a tip - we used the bubble wrapping (that came with the shower kit) for tightening up the fixings rather than cloth as it was easier to see and handle in a tight space.lookbook said:Plumbing is easy - just don't mess with electricity. Too dangerous IMHO.1 -
