I am wishing to take a ex partner to the small claims court over money
owed. I do not know his address (long story) do I need this. I have read
that i can serve the papers via email or his work address. Does anyone
know if this is correct?

if you know where he works, you will be able to find his home address. The comments I post are my personal opinion. While I try to check everything is correct before posting, I can and do make mistakes, so always try to check official information sources before relying on my posts.0

He works at various sites so know the main employer not necessarily where he is at day to day-week. How could I find it out from his work?

I doubt that his works would give out his address. GDPR springs to mind.Life in the slow lane0

...by hanging around outside at clocking-off time till he emerges then following him home. That's the only way.tacpot12 said:if you know where he works, you will be able to find his home address.
His employer will not (and must not) share any personal information with you. They might not even confirm whether he works there.1 -
You can have papers served to the last known address, get a ccj in default and then use hceos to look for him.
Not nice, but happens all the time0 -
What is hceos? Thank you0

You could try a tracing agent. Needn't cost all that much (though no guarantees of a result).0
