  • you could make a frittata with some eggs, or boil some up with a couple of stock cubes and some water then blitz to make a soup.... add them to bolognese sauce, shepherd's pie, boil them for a couple of minutes, cover with a cheese sauce and then brown in oven... make pasta primavera.... boil them, liquidize then add to any sauce or gravy you're making for extra vitamins.... mix with some leftover mashed or chopped boiled potatoes and fry to make bubble and squeak....

Soup from frozen veg should be fine, just make sure you add some herbs or spices to flavour any mixed batches. Cumin for roots, mint for peas etc.
If you've have not made a mistake, you've made nothing

You could always offer them on Freecycle.

I hate them! Apart from petit pois. I have to clear my mother' freezer, she had a penchant for frozen veg, and she seems to have lots of them. Apart from chucking them out what can I do with them? Soup? Never made it from frozen veg, what's it like? Some pack are mixed, some are peas and the rest I dont know.

I'd soften some onion and garlic, add some vegetable stock and the frozen veg, simmer for 15 mins and liquidise :D Easy soup!

As this has fallen from the front page of OS, I'll add it to the existing thread on using frozen veg, to give you more ideas.
