NPE Letter Before Claim - Not sure if the real deal or to Ignore - please help

Hi All,

First of all, this forum has helped me so much in dealing with private parking tickets and I am very grateful of the whole community on here.

A bit of a background:
The ticket was for parking at Starbucks without being a patron. NPE sent images of the driver getting out of the car, going elsewhere, and then getting back in the car and driving off. No evidences of the driver going into Starbucks. Total time of parking was shown as 5-8min. 

Appeal was made but rejected. After the appeal got rejected an email was sent to NPE with a purchase receipt photo of Starbucks mobile app showing the purchase and time of purchase, which matches the date and time of the "parking offence". The email was ignored by NPE and then 100s of debt collector letters followed.

Why wasn't the purchase receipt photo included in the appeal? At the time of appeal, didn't know the purchase receipts could be accessed on the Starbucks app. 


I had read the newby guide and followed all the steps but now that I had received my very first LBC, I can't quite figure out if this is the real deal or just another letter to be ignored. 
The image below it's all there is to it with nothing on the back of the letter and no forms to fill in.

As advised on the guide, I ignored all the debt collectors letters etc but my partner is now quite worried and suggests on paying but I've gone too far to give in now.

Any help on next steps would be much appreciated.
