I usuallly do soups and the slow cooker comes out, infact I've started using it now, got a casserole in at the moment, but have also made some coconut rice pudding in it this week, which is yummy. I have to admit I've been trawling the internet for a variety of recipes to increase the choice I have too. Some good sites out there and I get the Delicious magazine which usually has some good things in that are easy to make. I've started using an Annabel Karmel book I've had for quite a few years and found a lot of good recipes in there, so I've ordered another of her books too.
I get bored easily with the same recipes as well, I'm always looking for new things to try, luckily my kids will eat most things.

or you could try this recepie, it is cheap and simple
Sausage Stroganoff
Serves 4
400- 500g Sausage, sliced/diced ( I prefere Mattesons sausage, its quick to fry)
1 Onion, chopped
1 tbsp butter
1 tsp mustard
1 tbsp tomato pure
142ml cream (you might want to do half and half milk if you feel cream is to rich)
1 smal tin of sweetcorn, drained (optional)
salt, pepper, paprika powder
Fry the onion in the butter, mix in the sausage and fry it for a couple of min. Mix in mustard and pure and fry for a min.Mix in the sweetcorn and pour in the cream (with a bit of milk if you like) and stir. Simmer for 5 min.
Serve with potatoes (boiled or fried) or rice.0 -
I really like the change in season and Autumn is one of my fav times of year. I dust off my slo-cooker and soup pan ready for action. A thick vegetable based soup with loads of unbuttered HM bread really fills you up and is dirt cheap. Carrot and mint and leek and potato are two firm favs at Cez MATH.
If you are trying too loose weight stop putting butter in your mash potato, you can get creamy mash with just a splash of milk especially if you use an electric hand mixer. Replacing mashed potato with mashed parsnip, carrot or swede also helps reduce those starchy calories and counts towards your 5 a day. HTHLife's a beach! We had sausages in onion gravy done in the slow cooker tonight, with mashed potatoes and carrots. Both DDs cleared their plates as it was sooo nice.

I love cannelini beans in a bit of chicken stock, a squirt of tomato puree (a splash of white wine if I have some open) and some chopped chorizo mixed in. You really dont need much chorizo to make it really flavoursome. Served with a grilled chicken breast or crusty bread - it's delicious and really good warming comfort food!0

I've just made pea and mint soup thickened with potato. All ready in fridge for lunches this week.
Liver and onions with mash is also a great favourite in this house.0 -
Make shepherd's pie with lean mince, bulked with peppers, onions, celery, beans, mushrooms, tinned tomatoes etc. Spice it up with a pinch of chilli and some garlic, and as mentioned use mild instead of butter for the mash. Fork the potato and then grill for ultimate crispy winter yumminess.
Also, add plenty of fresh ground black pepper to your mash - you can use much less butter then without noticing!0 -
My family loves a mixed bean casserole - sometimes I add a couple of chopped, good quality sausages, or leftover meat. Another really cheap and simple, warming dish is carrot and ginger soup. Just boil carrots (in water or stock) and a small piece of ginger until soft then blitz in blender. Season with salt and freshly milled pepper, then serve with warm, crusty bread - yum :j:heart2::heart2:On ne voit bien qu'avec le coeur :heart2::heart2:we're debt freeeeeeeeeeeee....FREEEEDOM!!! :j:T0

I'm with the majority above - soups and stews and warm comfort food is the order of the day...
Also, autumn is the season of minced beef- one "basic" recipe can be turned into bolognese, cottage pie, chilli, etc, just with the addition of a few different herbs/spices. I also always include a tin of baked beans and several large grated carrots in any minced beef recipe - it bulks the meat out very cheaply and gets some of those all important daily fruit/veg portions in without any stress/effort!!;)
Ooh, and sausage casserole - tin of tomatoes, tin of beans, chopped onion and some carrots, all thrown into a pot together with some sausages (I pre-brown mine under the grill to give them some colour and stop them looking anaemic!:o) and whatever herbs/spices you fancy on the day...served with mashed potatoes and a green veg for some colour (favourites in the House of Piglet would be either green beans or cabbage - or both!:p).
