Identify unique "to" address in mailbox

I used to have a catchall mailbox for my domain and so for a while would give each company I signed up to etc a unique email address so was easy to spot who was sharing my details etc. 

Dont have that now and so need to setup aliases for each of them... is there a way to export all the headers into a CSV or equiv to be able to identify the address each of the emails in the inbox was sent to? Mails current in Apple Mail connecting via IMAP but could switch to another client if easier.

    Simplest solution is use a gmail address because gmail allows 'plus addressing'. So for the address dgg@gmail com you can use dgg+1@gmail.com, dgg+2@gmail.com etc.
