Hi, I'm looking to purchase one of these - I was hoping that I could install it without drilling into the wall - and I see they do ones with a no drill mount - my question is - can't someone just steal the actual Ring Doorbell?

Yes they can, it's very easy. However, they can't use it as they won't be able to un-register/re-register it to themselves so it won't work.1

As Peter999_2 says.
And if it makes you feel better - even doorbells fitted to mounts that are screwed in are easily stolen.
Most doorbells can be prized off using a small flat head screwdriver popping them out from the bottom. The doorbell is hardwired, but the wires used are typically very thin and come off without any effort. I could probably steal mine in 2-3 seconds in one quick motion with one of those sim card tray tool things.
Fortunately of all the things that might be stolen from someone's doorbell, a camera that records them doing it is probably the least wise to take.Know what you don't2
