They're definitely mature, but still edible now.
That said, I've seen some people say you can eat them a fair bit after this when they're nearly fully open flower heads (just the petals, not the heart at that point as it's started to develop into the fussy stamens).
If you cut yours now then you might find the plants produce secondary flowers that you can harvest later in the seasonI'm not an early bird or a night owl; I’m some form of permanently exhausted pigeon.1
